History

The cultivation of the olive tree has been practiced for over 6000 years.

In ancient times, civilizations like egyptian, phenicia, greek or roman used it so much for its culinary properties as for its medical properties. In Greece it acquired a high commercial value and they say that the roman aristocracy greatly valued the oil that came from the iberian peninsula. The romans converted it in one of the most important crops of Andalucia and exporting it all over the confines of the Roman Empire.

Two thousand years a go the region of Antequera was known as a big olive oil producer as evidence by the writings as well as the forty archaeological discoveries of roman mills found in this land. among which stand the amphoras olearia. One of them, el molino de la quinta (S.I-V d.C) preserves the press room (Torcularium), the counterweight stone and the "trujal" (labrum).

According to the Córdoba university , in this roman mill were found fossilized olive stones wich are the ancestors of the current hojiblanca variety.
